Mixed Vegetable/ Sabzi

I love eating all the bread varieties - roti, poori, paratha, naan....and so on. But then I definitely need a vegetable that is perfect to go with each one of them. This mixed vegetable can go well with roti and plain parathas or even with dal rice. You can simply follow this method and use any vegetable that you can grab. You can use cauliflower, tomatoes, beans and even broccoli.

Ingredients: (serves 3)

1 cup potato, carrots, bell peppers, onions (cut into cubes)
peas
1 green chilly
1/4 " ginger
2 garlic cloves
1 teaspoon sugar
salt
oil
turmeric powder
kitchen king masala
corriander leaves

Method:

Boil the potato, carrots and peas and strain. Chop the chilly, garlic and ginger and make a paste. Heat oil in a pan and add sugar. Once the sugar turns to light brown colour add the paste. Add the onions and bell peppers and saute them. Add the rest of the veggies and add turmeric powder, salt and kitchen king masala. Cover the pan with a lid for the veggies to become crisp.
Garnish with corriander leaves.

  1. My mom used to make this same kinda thing, but veggies were cut smaller, and we would mix it with rice and also eat :D
